These are easy to make, Nice apple flavor. Great with a big glass of cold milk, or a cup of hot coffee or tea. You can cut the recipe in half if you want.

Ingredients

butter
3/4 c
sugar
2 medium
eggs, beaten
5 c
sifted cake flour
1 tsp
salt
8 tsp
baking powder
2 c
milk
2 1/2 c
peeled and diced apples
2 tsp
vanilla
1/2 tsp
apple extract (optional)
1 c
chopped walnuts (optional)
sugar and cinnamon for topping

How to Make Tender apple and walnut muffins

Step-by-Step

  • 1Cream butter and the sugar until light and fluffy, add the beaten eggs and beat until well combined. add the vanilla and apple extract to the milk
  • 2add the dry ingredients to the sugar mixture alternating with milk. beat until well combined, fold in the chopped apples and walnuts.
  • 3Fill greased or cup cake paper lined muffin cups, about 2/3 full. Sprinkle with sugar and cinnamon ( I use about 2 teaspoons on each)
  • 4Bake in pre heated 400 degree oven for 20-25 minutes or until a tooth pick comes out clean.
  • 5After Muffins have cooled completely I drizzle mine with powder sugar that I have mixed with a little cream and apple extract just thin enough to drizzle but it firms up after sitting for a few minutes
