tender apple and walnut muffins
These are easy to make, Nice apple flavor. Great with a big glass of cold milk, or a cup of hot coffee or tea. You can cut the recipe in half if you want.

Ingredients
- 1 cup butter
- 3/4 cup sugar
- 2 medium eggs, beaten
- 5 cups sifted cake flour
- 1 teaspoon salt
- 8 teaspoons baking powder
- 2 cups milk
- 2 1/2 cups peeled and diced apples
- 2 teaspoons vanilla
- 1/2 teaspoon apple extract (optional)
- 1 cup chopped walnuts (optional)
- - sugar and cinnamon for topping
How To Make tender apple and walnut muffins

Step 1Cream butter and the sugar until light and fluffy, add the beaten eggs and beat until well combined. add the vanilla and apple extract to the milk

Step 2add the dry ingredients to the sugar mixture alternating with milk. beat until well combined, fold in the chopped apples and walnuts.

Step 3Fill greased or cup cake paper lined muffin cups, about 2/3 full. Sprinkle with sugar and cinnamon ( I use about 2 teaspoons on each)

Step 4Bake in pre heated 400 degree oven for 20-25 minutes or until a tooth pick comes out clean.

Step 5After Muffins have cooled completely I drizzle mine with powder sugar that I have mixed with a little cream and apple extract just thin enough to drizzle but it firms up after sitting for a few minutes
