I create this new cake recipe for the fans of Girl Scout cookies, combining Tagalongs and Thin Mints.

Ingredients

  • CAKE
  • 1 3/4 cups crushed Girl Scouts tagalongs cookies, divided
  • 1 3/4 cups crushed Girl Scouts Thin Mints cookies, divided
  • 1 package white cake mix (18.25 oz)
  • 1 cup water
  • 1/3 cup vegetable oil
  • 4 egg whites
  • 1 cup crunchy peanut butter
  • 1 tablespoon malted milk powder
  • 1/2 cup milk chocolate chips
  • 3/4 cup chocolate syrup
  • 2 teaspoons mint extract
  • TAGALONGS FILLING
  • 1 cup heavy cream
  • 1/2 cup chocolate milk
  • 3/4 cup creamy peanut butter
  • 3/4 cup vanilla Greek yogurt
  • THIN MINTS FROSTING
  • 1 tube frozen whipped topping, thawed
  • 8 ounces cream cheese, softened
  • 1 packet instant chocolate pudding mix
  • 3/4 cup chocolate hazelnut spread
  • 1/2 cup chocolate syrup
  • 3 teaspoons mint extract

How To Make tagamints layer cake

  • Step 1
    Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
  • Step 2
    Sprinkle 1 cup crushed Tagalong cookies on one cake pan and sprinkle 1 cup crushed Thin mints cookies on another cake pan.
  • Step 3
    In a large bowl, combine cake mix, water, oil and egg whites with an electric mixer at low speed for 5 minutes until moistened. Beat 3 minutes on high speed.
  • Step 4
    Divide the batter among the cake pans.
  • Step 5
    Add the peanut butter and chocolate chips into the Tagalongs pan and mix together.
  • Step 6
    Add the chocolate syrup and mint extract to the Thin Mints pan and mix together.
  • Step 7
    Bake for 30 minutes, or until a toothpick inserted the center comes out clean. Cool completely for 5 minutes.
  • Step 8
    To make the Tagalongs filling, combine heavy cream, chocolate milk, peanut butter and Greek yogurt in a medium bowl and whisk together until blended. Set aside.
  • Step 9
    To make the Thin Mints frosting, combine the whipped topping, cream cheese, chocolate pudding mix, chocolate hazelnut spread, chocolate syrup and mint extract in a large bowl and mix together until smooth and creamy.
  • Step 10
    Place the Thin Mints cake on a serving plate. Spoon Tagalongs filling on top and spread in a thick layer. Sprinkle with remaining crushed Tagalongs cookies.
  • Step 11
    Place the Tagalongs cake on top of the Thin Mints cake. Spread the frosting on the top and sides of the cake and sprinkle with remaining crushed Thin Mints cookies. Refrigerate overnight.
