Yet another saved recipe from the 1920s or 30s from my Auntie Ellen. In my aunt's handwriting on yellowing notepaper, this recipe is credited simply to a friend or parishioner -- Lena.

Ingredients

  • 1-1/2 c
    granulated sugar
  • 1/2 c
    water
  • 6
    eggs, separated
  • 1/4 tsp
    salt
  • 1 c
    swansdown cake flour
  • 3/4 tsp
    cream of tartar
  • 1 tsp
    orange extract

How to Make Sunshine Cake

Step-by-Step

  1. Boil sugar and water until threads drop from tip of a spoon.
  2. Pour hot syrup in fine stream into beaten egg whites, to which salt has been added. beating the mixture until cool. Then add the well-beaten egg yolks.
  3. Sift flour once into large bowl, measure, add cream of tartar and sift again three times.
  4. Fold very carefully into the egg mixture, add extract.
  5. Pour into an ungreased angel cake pan and bake 50 to 60 minutes in a moderate oven, 325 to 350 degrees.
  6. When done, invert to cool.
