Yet another saved recipe from the 1920s or 30s from my Auntie Ellen. In my aunt's handwriting on yellowing notepaper, this recipe is credited simply to a friend or parishioner -- Lena.

Ingredients

1-1/2 c
granulated sugar
1/2 c
water
6
eggs, separated
1/4 tsp
salt
1 c
swansdown cake flour
3/4 tsp
cream of tartar
1 tsp
orange extract

How to Make Sunshine Cake

Step-by-Step

  • 1Boil sugar and water until threads drop from tip of a spoon.
  • 2Pour hot syrup in fine stream into beaten egg whites, to which salt has been added. beating the mixture until cool. Then add the well-beaten egg yolks.
  • 3Sift flour once into large bowl, measure, add cream of tartar and sift again three times.
  • 4Fold very carefully into the egg mixture, add extract.
  • 5Pour into an ungreased angel cake pan and bake 50 to 60 minutes in a moderate oven, 325 to 350 degrees.
  • 6When done, invert to cool.
