Yet another saved recipe from the 1920s or 30s from my Auntie Ellen. In my aunt's handwriting on yellowing notepaper, this recipe is credited simply to a friend or parishioner -- Lena.

Ingredients
- 1-1/2 cup granulated sugar
- 1/2 cup water
- 6 - eggs, separated
- 1/4 teaspoon salt
- 1 cup swansdown cake flour
- 3/4 teaspoon cream of tartar
- 1 teaspoon orange extract
How To Make sunshine cake

Step 1Boil sugar and water until threads drop from tip of a spoon.

Step 2Pour hot syrup in fine stream into beaten egg whites, to which salt has been added. beating the mixture until cool. Then add the well-beaten egg yolks.

Step 3Sift flour once into large bowl, measure, add cream of tartar and sift again three times.

Step 4Fold very carefully into the egg mixture, add extract.

Step 5Pour into an ungreased angel cake pan and bake 50 to 60 minutes in a moderate oven, 325 to 350 degrees.

Step 6When done, invert to cool.
