This is one of my daughter's favorite cakes.Very old recipe.

Ingredients

  • 1 cup hulled,sliced strawberries
  • 3 tablespoons strawberry preserves
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract
  • 3/4 cup sugar
  • 2 cups all purpose baking mix plus 2 tablespoon more
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 11/2 sticks butter,cut in 1/2 inch cubes
  • 1 cup sour cream
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 teaspoons brown sugar, light

How To Make strawberry strusel cake

  • Step 1
    In a blender ,combine strawberries and preserves.In a small bowl,make a paste by mixing cornstarch and vanilla.Add to strawberries mixture.Set aside.
  • Step 2
    In a large bowl mix together,sugar,flour,baking powder and soda.Add butter cubes,and using your fingertips, rub them in until mixture resembles large coarse crumbs.Put 1/2 cup aside,for topping.
  • Step 3
    Add sour cream,egg,and vanilla to crumbs in a large bowl.Mix well.Dough is very sticky.Drop dollops of half the batter into 9 inch prepared springform pan.Pat batter across bottom of pan and about 1 inch sides up.Spread strawberry puree leaving 1/2 inch border .
  • Step 4
    Cover with remaining batter.Add 2 teaspoons of brown sugar to 1/2 cup crumbs.Mix well and sprinkle evenly over the cake.
  • Step 5
    Bake 45 minutes in 375 degrees preheat oven.Serve with vanilla or strawberry ice cream.
