strawberry nut cake

This recipe belongs to my son's mother-in-law, Constance. It is so good and refreshing plus a beautiful cake. I have made it myself a few times and find it to be very easy to make. Peggi Tebben has provided us with a pic since she made it a couple of days ago. She did a great job, too.

Ingredients

  • 1 box duncan hines white cake mix
  • 1 small box strawberry jello (dry)
  • 1 small box vanilla instant pudding mix
  • 1/2 cup canola or vegetable oil
  • 1 stick butter, softened
  • 1/2 cup milk (i use 1%)
  • 4 medium eggs
  • 1 cup fresh (or frozen) strawberries, chopped
  • 1 cup chopped pecans
  • ICING:
  • 16 ounces powdered sugar
  • 1 stick butter, softened
  • 1/2 cup fresh (or frozen) strawberries, chopped
  • 1/2 cup coconut
  • 1/2 cup chopped pecans

How To Make strawberry nut cake

  • Step 1
    CAKE: Mix all ingredients and bake in three 9" floured and greased cake pans at 350 for 25 - 30 minutes. Cool in cake pans for 10 minutes, remove and cool completely before frosting.
  • Step 2
    ICING: Mix all ingredients together and spread between, on sides and top of cooled cake layers.
  • Step 3
    Tip: Our fellow member, Rose Rauhauser, made the cake and froze it and then iced it once the cake had thawed. Thanks, Rose, for sharing this tip.
