spiced zucchini bread
My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I hope you try it and enjoy it as much as I always did. I think I'm going to make some myself! Makes one loaf.
Ingredients
- 1 stick butter or margarine
- 1 cup sugar
- 2 - eggs
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1 cup zucchini (raw, finely grated, unpeeled; packed but not too tightly)
- 1/2 cup walnuts
- 1 teaspoon vanilla
How To Make spiced zucchini bread

Step 1Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.
