Ingredients For spiced cocoa-apple cake

  • 1/3 c
    butter, softened
  • 1 2/3 c
    sugar
  • 2
    eggs
  • 2
    egg whites
  • 1/2 c
    buttermilk
  • 1/2 c
    unsweetened applesauce
  • 3 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 1/2 c
    baking cocoa
  • 1 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground allspice
  • 2 c
    grated peeled tart apples
  • 1/2 c
    chopped walnuts, toasted
  • 1/2 c
    miniature semisweet chocolate chips
  • 1/2 tsp
    confectioners' sugar

How To Make spiced cocoa-apple cake

    In a large bowl, beat together butter and sugar until crumbly, about 2 minutes. Add eggs, then egg whites, beating well after each addition. Beat in the buttermilk, applesauce, and vanilla (mixture will appear curdled).

    In a separate bowl, combine the flour, cocoa, baking powder, cinnamon, baking soda, salt, and allspice; stir into the butter mixture just until blended. Stir in the apples, walnuts, and chips.

    Transfer the mixture to a 10-inch fluted tube pan that has been sprayed with cooking spray.

    Bake in a preheated 325-degree oven for 50 to 60 minutes, or until a toothpick inserted near the center comes out clean.

    Cool for 10 minutes before removing from the pan to a wire rack to cool completely. Sprinkle with confectioner's sugar and serve.
