spiced beet cake with cream cheese glaze

This recipe makes two cakes. Make one for dinner and save the other. We enjoyed this served with Spiced Apple Chai. If you really want to make this a showstopper, optionally add half a bottle of red food coloring and half a bottle of blue food coloring to the batter. Ingredients

  • BEET CAKE
  • 2 - large beets
  • 3 cups cake flour
  • 1 cup dark brown sugar
  • 1 cup sugar
  • 2 - eggs
  • 1/2 cup coconut oil
  • 1/2 stick butter
  • 3 tablespoons vanilla
  • 1 1/2 tablespoons baking soda
  • 1 1/2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon allspice, ground
  • - turbinado sugar for topping2
  • CREAM CHEESE GLAZE
  • 1/2 stick butter, room temperature
  • 1/2 package cream cheese
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 2 cups confectioners' sugar
  • 2 tablespoons milk

How To Make spiced beet cake with cream cheese glaze

  • Step 1

    Allow to cool. Then peel and shred beets. Set aside.

    Preheat oven to 325.

    Cream oil, butter, and sugars for 2 minutes. Then add each egg, one at a time, plus vanilla. Beat for an additional 2 minutes.

    Sift and add together all dry ingredients. Then add by quarters to wet ingredients.

    Whisk in shredded beets.
  • Step 7
    Take 2 greased, circular pans, divide the batter evenly.
  • Step 8
    Sprinkle turbinado sugar over both cakes.
  • Step 9
    Place in oven for 35 minutes or until a toothpick comes out clean.
  • Step 10
    Allow to cool to slightly warm before adding glaze.
  • Step 11
    To make glaze, place all ingredients in a mixing bowl and beat. Add as little or as much milk as you like for desired thickness.
  • Step 12
    Spoon over cakes. Optionally sprinkle cinnamon atop.
