special occasion 3 layer cake w/sugar free frostin
I created this recipe to be used as a SPECIAL OCCASION DESSERT, for any one that cannot eat a wheat based dessert, or that may be diabetic, it is lower in sugar than a typical cake, because it is made with a zero calorie sweetener. I even made the SUGAR FREE FROSTING with a deep dark cocoa. Something that is not always easy to find. The nutrition analysis does include the frosting. It is not a dessert that you can have everyday, but for that VERY SPECIAL PERSON IN YOUR LIFE, that you want to impress. My neighbors mom thought this was the best Sugar Free dessert she had ever eaten.

Ingredients
- DARK CHOCOLATE CREAM CHEESE FROSTING
- 1 pound cream cheese, softened
- 1 stick butter, softened
- 4 tablespoons dark chocolate cocoa
- 1 1/4 cups splenda
- 1/4-1/3 cup heavy whipping cream, as needed for spreading consistency
- 2 teaspoons lorann raspberry emulsion, or extract
- CAKE BATTER
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1 1/2 cups ground flax seeds
- 2 1/2 cups splenda
- 1 1/2 tablespoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups evaporated milk
- 1/4 cup extra virgin olive oil
- 8 ounces unsweetened applesauce (1 cup)
- 4 large eggs, room temperature
- 1 tablespoon lorann raspberry emulsion
How To Make special occasion 3 layer cake w/sugar free frostin

Step 1Preheat oven to 350 degrees F. You will need 3 eight inch cake pans for this cake. Add dry ingredients to one bowl almond flour, ground flax seeds, coconut flour, salt, baking powder, & baking soda, whisk and set aside till needed.

Step 2In a second larger bowl add eggs, strawberry emulsion, olive oil, applesauce & milk. Beat to blend together.

Step 3Now add 1/3 of the dry mixture into the wet, beat till blended, & repeat 2 additional times, until cake batter is fully blended together.

Step 4Spray each cake pan with bakers joy, or grease with butter, and dust lightly with flour. Divide cake batter evenly between the 3 pans.

Step 5Bake in preheated 350 degree F.oven for 25-30 minutes or until cake pulls away from sides of pan. Allow to cool for 10 minutes then invert onto a wire rack & cool completely.

Step 6Blend Zero calorie sweetener, with cocoa. Then sprinkle over butter and cream cheese in a medium bowl & beat till blended together.

Step 7FROSTING: Add the softened cream cheese, & butter to a medium size bowl.

Step 8Now start with about 1/4 cup heavy whipping cream & teaspoon of emulsion. Beat till blended together & frosting is creamy & smooth, add additional 1-2 tablespoons whipping cream for a thinner spreading consistency.

Step 9Now add first cooled cake to cake platter & spread with frosting, then top with second & third layer & repeat with frosting.

Step 10Store in fridge till ready to serve, Keep refrigerated.
