This is great for potlucks. Easy to make the night before and tastes great. I've been told that they now make seamless crescent rolls. If you can find those, they'd work perfectly for this recipe. Special thanks to my Aunt Kim for sharing this recipe with me.

Blue Ribbon Recipe

This sopapilla cheesecake is so easy and so delicious! A small serving goes a long way, but be prepared to serve up seconds just the same. The sweet, dense, and creamy cheesecake is sandwiched between flaky, buttery crescent dough. Once baked, the top cinnamon and sugar layer becomes crunchy, adding the cinnamon flavor associated with sopapillas. This is a wonderful dessert for any occasion. It's easy to throw together, but still looks impressive.

Ingredients

  • 2 cans crescent rolls (8 oz each)
  • 2 pinches cream cheese, softened
  • 2 cups granulated sugar, divided
  • 2 teaspoons vanilla extract, divided
  • 1/2 cup butter
  • - ground cinnamon

We used crescent dough sheets when testing this recipe.
  • Spray a 9x13 baking dish and preheat the oven.
    Step 1
    Preheat the oven to 360 degrees F. Spray a 9x13-inch pan with non-stick cooking spray. Use one can of crescent rolls to line the bottom of the pan.
  • Add a can of crescent dough to the bottom of the baking dish.
    Step 2
    Stretch the dough and pinch the holes closed to form a crust. Pinch the holes closed to form a crust.
  • Blend softened cream cheese, sugar, and vanilla extract.

    Blend the softened cream cheese, 1 granulated sugar, and 1 teaspoon vanilla extract.
  • Spread mixture over the crescent dough.

  • Add the second piece of crescent dough on top.

    Stretch the second can of crescent rolls over the cream cheese mixture to form the top crust.
  • Mix melted butter, 1 cup of sugar, and 1 teaspoon vanilla extract.
    Step 6
    Melt butter. Blend in 1 cup of granulated sugar and 1 teaspoon vanilla extract.
  • Spread over the crescent dough.
    Step 7
    Spread evenly over the top of the crescent dough.
  • Amply sprinkle with cinnamon.
    Step 8
    Sprinkle generously with cinnamon.
  • Baek 40 - 45 minutes.
    Step 9
    Bake at 360 for 40 - 45 minutes until bubbly, and the crust is slightly browned.
  • Let cool before cutting into squares.
