sherry's easy sour cream coffee cake
I finally, ( this weekend,) perfected my sour cream coffee cake, finally, lol. It took weeks for me to get it right, I don't know why, but I had a hard time getting this "just right."

Ingredients
- 1 cup softened butter
- 2 cups sugar
- 2 teaspoons vanilla
- 4 large eggs
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups light sour cream
- 3/4 cup sugar
- 2 tablespoons cinnamon
- 1/2 cup finely chopped walnuts

Step 1Heat oven to 350. Lightly spray a bundt pan w/ cooking spray. In lg bowl, cream butter, 2 cups sugar and vanilla. Add eggs, one at a time, beating well.

Step 2In another bowl combine flour, baking powder, baking soda and salt. Add flour mix to butter mix alternately w/ sour cream. Beat until smooth.

Step 3Spoon 1/2 the batter into pan. In another bowl, combine 3/4 cup sugar, cinnamon and walnuts. Sprinkle 1/3 nut mix over batter. Pour remaining batter over nut mix. Sprinkle w/ remaining nut mix. Bake 1 hr, or until a toothpick inserted in center comes out clean.
