shelby's iced french vanilla cake with berries
My teenager had a sweet tooth this evening so I suggested she do what I'd do...raid the pantry and make something. Here's what she came up with. The cake was so fluffy and moist and the icing had that yummy tang with a hint of sweetness that I love. The blueberries were the perfect final touch to bring it all together. I was so surprised and proud of her, I just had to share! Finally, I have confirmation that at least occasionally, she's listening to me! lol

Ingredients
- CAKE:
- 1 box betty crocker white cake mix (16.25 oz)
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 2 - eggs
- 1 teaspoon mccormick french vanilla blend extract
- ICING:
- 11 ounces vanilla baking chips
- 4 tablespoons salted butter, cubed
- 1/3 cup 2% milk
- 1/2 teaspoon mccormick french vanilla blend extract
- 8 ounces whipped cream cheese
- 1/4 - 1/2 cup powdered sugar
- - blueberries for garnish

Step 1Preheat oven to 350f. Grease and flour bundt pan.

Step 2In a large bowl, combine cake mix, water, oil, eggs and french vanilla blend. Mix well, working out any lumps.

Step 3Pour cake mix into prepared pan and bake for 40-45 mins. Flip cake onto cooling rack and set aside while preparing the icing.

Step 4In a double boiler, melt together baking chips and butter, stirring regularly.

Step 5Gently blend in milk and french vanilla blend until well combined, then remove from heat.

Step 6In a bowl, mix together cream cheese and powdered sugar (start with 1/4 cup, you can add more later according to your taste and desired consistancy).

Step 7With the mixer running, slowly add the melted chip mix to the cream cheese mix.

Step 8Ice the cake while it's still warm, garnish with berries if you wish, and enjoy!
