I call this Shara's cake, because this is my daughters favorite cake for her birthday that I make. It's so moist and yummy!

Ingredients
- 3 large eggs, beaten
- 2 cups sugar
- 1 cup plus 2 tbsp canola oil
- 1-1/2 cup cake flour
- 1/2 cup plus 1 tbsp whole wheat flour
- 1-1/8 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon baking soda
- 1-1/2 cup sweetened shredded coconut
- 2 cups grated carrot
- 1 cup plus 2 tbsp crushed, drained pineapple.
- 1 cup chopped walnuts
- 1 cup raisins
- 1-1/2 stick butter, softened
- 12 ounces reduced-fat cream cheese, softened
- 3 cups powdered sugar
- 1-1/2 teaspoon vanilla
- 1 teaspoon cinnamon
How To Make shara's triple layer carrot cake.

Step 1Heat oven to 350. Spray 3- 8" round cake pans w/ cooking spray. In bowl, w/ mixer on high, cream eggs, sugar and oil until thick and creamy, about 5 mins. Sift together in another bowl, flours, cinnamon, nutmeg and baking soda.

Step 2Slowly add 1/3 of the dry mix into egg mix, beat well. Repeat w/ remaining dry mix, beating well after each addition. One at a time, fold in coconut, carrots, walnuts and raisins.

Step 3Divide batter evenly among pans. Bake 40-45 mins, or until a toothpick inserted in center comes out clean. In bowl, cream butter and cream cheese until smooth. Add vanilla and cinnamon. Slowly beat in powdered sugar until smooth and spreadable. Frost cooled cakes.
