This is a sort of Russian cheesecake, except it is made with farmer's cheese. I have not tried it yet, but it does sound interesting. Recipe & photo:grouprecipes.com

Ingredients
- 2 1/2 cups farmer's cheese
- 2 - eggs, separated
- 5 tablespoons cream of wheat (not instant)
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 tablespoon butter, melted
- 1/2 cup toasted walnuts
- 1 cup sliced strawberries
- - sour cream, optional
How To Make russian zapekanka

Step 1In a large bowl, combine cheese and egg yolks. Mix in the cream of wheat and sugar.

Step 2Add baking soda, salt, vanilla and melted butter. Mix well.

Step 3In another bowl, beat the egg whites until stiff; fold into other mixture. Fold in the walnuts.

Step 4Add most of the strawberries and mix in.

Step 5Pour mixture into a buttered 2-qt. baking dish. Spread a layer of sour cream on top and decorate with more sliced strawberries.

Step 6Bake in a preheated 350-degree oven about 50 minutes, or until golden.

Step 7NOTE: You may also add about 1/2 cup raisins, if you like. Add them with the walnuts.
