Ingredients
- 1 cup shortening, butter flavor
- 1 cup powdered sugar
- 1 cup powdered sugar - used for coating the cookies
- 2 teaspoons real vanilla extract
- 1 cup almond flour
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1 pinch salt (optional)
- 1 cup finely chopped pecans
How To Make russian tea cakes (cookie perfection)

Step 1Preheat Oven to 350 Combine Shorting, Powdered Sugar and Vanilla in Electric Mixing Bowl. Using the whisk attachment whip until light and fluffy. ( It should resemble frosting )

Step 2Combine Flour, Almond flour, baking soda and salt, in Medium bowl.

Step 3Add Flour mixture to the whipped mixture all at once. Change to your paddle attachment and mix till just combined. Add pecans and mix to distribute.

Step 4Roll into 1.5 inch balls and place on cookie sheet 1 inch apart. Bake 15 min or until they just start to brown on the bottoms.

Step 5Once you remove the cookies allow them to cool slightly and roll them in powdered sugar and place on racks. (I suggest you use your spatula to movie them from the cookie sheet to the sugar they are very tender and the outside tends to come off in your hands) Once they have cooled completely give them another roll in the powdered Sugar. Enjoy.
