RUSSIAN HONEY COFFEE CAKE
2eggs, well beaten
1/2 chot dark tea, brewed
2 call purpose flour
1 tspground cinnamon
1/2 tspbaking powder
1/2 tspbaking soda
1/2 cchopped nuts, any kind
·grated rind of one lemon
How to Make RUSSIAN HONEY COFFEE CAKE
- In a large bowl, mix all ingredients together--except for chopped nuts. Beat well.
- Pour into a greased loaf pan which has been lined with wax paper on the bottom. Sprinkle top with chopped nuts.
- Bake in a preheated 325-degree oven for 45 minutes to an hour or until toothpick comes out clean. If top browns too fast, cover with foil last 15 minutes.
- Cool completely and remove from pan. Wrap and let sit overnight before slicing.
Note: this coffee cake freezes well.
