Ingredients

  • 1/2 cup sugar
  • 2 - eggs, well beaten
  • 3/4 cup honey
  • 2 tablespoons oil
  • 1/2 cup hot dark tea, brewed
  • 2 tablespoons whiskey
  • 2 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped nuts, any kind
  • - grated rind of one lemon

How To Make russian honey coffee cake

  • Step 1
    In a large bowl, mix all ingredients together--except for chopped nuts. Beat well.
  • Step 2
    Pour into a greased loaf pan which has been lined with wax paper on the bottom. Sprinkle top with chopped nuts.
  • Step 3
    Bake in a preheated 325-degree oven for 45 minutes to an hour or until toothpick comes out clean. If top browns too fast, cover with foil last 15 minutes.
  • Step 4
    Cool completely and remove from pan. Wrap and let sit overnight before slicing. Note: this coffee cake freezes well.
