My mother made this cake when I was a child, it was my daddy's favorite.

Ingredients

  • RUSSIAN CAKE
  • 1 cup oatmeal, uncooked
  • 1 1/4 cups bowling water
  • 1 stick butter, room temperature
  • 1 cup light brown sugar, firmly packed
  • 1 cup white sugar
  • 2 - eggs
  • 1 1/2 cups flour, self rising
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon, ground
  • TOPPING RECIPE
  • 1 cup light brown sugar, firmly packed
  • 1 stick butter at room temperature
  • 1/3 cup evaporated milk
  • 1 cup coconut
  • 1/2 cup oatmeal, uncooked

How To Make russian cake

  • Step 1
    Mix Oatmeal and bowling water together in bowl, and let stand 20 minutes
  • Step 2
    Cream together: Butter, brown/white sugars and eggs.
  • Step 3
    Stir in oatmeal
  • Step 4
    Add flour, vailla and cinnamon. Mix well
  • Step 5
    Coat 9 X 13 cake pan with cooking spray. Bake at 350 derees for 25 - 30 minutes
  • Step 6
    Mix together all ingredients for topping.
  • Step 7
    Spread topping on warm cake
  • Step 8
    Place cake under broiler to brown topping.
