i created this another bonus oat layer cake recipe,two words:Rocky Road,it has 3 kinds of nuts,walnuts,macadamia nuts and almonds,the frosting will be smooth and crunchy.

  • 3 c
    rolled oats,divided
  • 3/4 c
    chopped walnuts
  • 3/4 c
    semi-sweet chocolate chips
  • 1 c
    miniature marshmallows,divided
  • 1 c
    chilled chocolate milk
  • 1 tsp
    almond extract
  • 1 box
    german chocolate cake mix
  • 1 1/4 c
  • 1/2 c
    vegetable oil
  • 3
    large eggs
  • 1
    packet instant chocolate pudding mix
  • 2 Tbsp
  • 6
    macadamia nuts,diced
  • 2 c
    chopped almonds,divided
  • 1 c
    hot fudge sauce,divided
  • 1 c
    heavy cream
  • 3/4 c
  • 1 c
    half and half
  • 1 pkg
    (8 ounces) cream cheese,softened
  • 1 jar
    marshmallow fluff

How To Make rocky road oats layer cake?

    In a medium jar,combine 1 cup rolled oats,chopped walnuts,semi-sweet chocolate chips,1/2 cup miniature marshmallows, chocolate milk and almond extract;whisk together with a fork until blended.

    Cover and refrigerated for 4 hours.

    Preheat oven for 350 degrees F.Coat two 9' round cake pans with baking spray.

    In a large bowl,combine cake mix,water,vegetable oil,eggs and pudding mix;beat on low speed for 3 minutes.

    Add rocky road oat mixture into the cake batter,beat again on medium speed for 40 seconds.

    Pour batter into the cake pans.Bake at 350 for 30 minutes or until a toothpick inserted the center comes out clean.Cool completely for 10 minutes.

    Heat margarine in a large skillet over medium heat.Add remaining rolled oats,diced macadamia nuts and 1 cup chopped almonds and saute for 5 minutes or until are tender.Remove from heat.Stir in 1/2 cup hot fudge sauce.Set aside.

    Mix heavy cream,nutella,half and half,remaining hot fudge sauce,cream cheese and remaining chopped almonds together in a medium bowl for 2 minutes until combined.

    Place a first cake(bottom side) on a serving plate.Spread marshmallow fluff onto the cake thick evenly.Add sauteed oat mixture and pressed down with spoon.

    Place a second cake on top.Spread the frosting on sides and top of the cake.Garnish with remaining miniature marshmallows.
