Quick and easy, fun and tasty way to use rhubarb. It only takes a few ingredients, and it's so easy the kids can help make it.

Ingredients

  • 3 cups chopped rhubarb
  • 1 cup sugar
  • 1 small raspberry gelatin
  • 3 cups mini marshmallows
  • 1 - white or yellow cake mix, prepared

How To Make rhubarb rumble

  • Step 1
    Prepare a 9x13" baking dish with food release spray.
  • Step 2
    Chop the rhubarb -- it'll take several good sized stalks. Layer the rhubarb in the bottom of the baking dish.
  • Step 3
    Sprinkle the sugar over the rhubarb. Sprinkle the gelatin over the sugar. Sprinkle the marshmallows over the gelatin.
  • Step 4
    In a mixing bowl, prepare the cake mix according to the package directions. Pour the cake batter over the marshmallow layer.
  • Step 5
    Bake about 55 minutes at 300*
  • Step 6
    NOTE: This recipe can easily be made gluten free by substituting your favorite gluten free cake mix.
