Revised, Healthy Mayonaise Cake

Remember the old fashioned mayonaise cake? It was a staple in our house when I was growing up. I like to take classic recipes and "healthy them up" a bit for my family. Not too long ago I tackled the mayo cake. It turned out really good, although different from the original. It is more like a moist, rich brownie. Really good! It's whole grain(oats are heart healthy!) and lower in refined sugar than the original. I use the mayo with olive oil because I try to use the "good fats" when possible, but if you want to make it low fat, you can use light mayo.

Ingredients

  • 2 c
    oat flour(grind oats in blender or food processor)-you can also use white whole wheat flour, or a blend of oat, whole wheat and all purpose.
  • 1/2 c
    sugar( i use turbinado or demerra rather than refined sugar)
  • 1/2 c
    cocoa
  • 2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 c
    mayo(not miracle whip)-i use the olive oil mayo(can also use yogurt)
  • 1/2 c
    honey
  • 1 tsp
    vanilla
  • 1 c
    water
  • 1/2 c
    dark chocolate chips(i like the ghirardelli 60% cocoa chips)

How to Make Revised, Healthy Mayonaise Cake

Step-by-Step

  1. Preheat oven to 350F
  2. Whisk together the flour(s), sugar, cocoa, baking soda and salt.
  3. Add the mayo, honey, vanilla and water. Beat well until smooth.
  4. Pour into greased 9x13 pan. Bake until a toothpick comes out clean, about 30-35 min.
  5. Scatter chocolate chips on top and return to the oven for 30 seconds to a min., just until chips are softened. Run a spatula over the surface of the cake, swirling the chips.
  6. If desired(and I usually desire!)-serve with real whipped cream.
