We love ice box cakes when the weather is warm outside. Poke cakes are cool and refreshing and everyone loves them. We had a small get together on May21, 2016 and it happened to be Armed Forces Day so A simple strawberry poke cake turned into a patriotic dessert. I always thought a white chocolate pudding would be great with a strawberry cake and it was amazing . The Cream cheese topping is fluffy and rich. The fruit you could make as a flag or how ever you want. This is a great dessert for any summer function!1

Ingredients For red white and blue strawberry cream poke cake

1 boxbetty crocker super moist strawberry cake mix

1/2 cvegtable oil
-
1 csour cream
-
2 tspstrawberry extract
- PUDDING MIXTURE
-
1 boxhershey's white choclate pudding (4 1/2 cup serving size)

1/2 cansweetened condensed milk(half of a 14 oz can, the other half will be used later)
-
1 1/2 ccold milk
- WHIPPED TOPPING
-
8 ozcream cheese
-
8 ozwhipped topping
-
1/2 cansweetened condensed milk
- FRUIT TOPPING
-
fresh blueberries
-
fresh sliced strawberries
How To Make red white and blue strawberry cream poke cake

1Preheat oven to 350 and sift cake mix and set aside

2Mix eggs, oil , sour cream and strawberry extract

3Slowly add cake mix to wet ingredients

4Spray 9x13 baking dish with Baker's Joy or something similar

5Pour mixed cake into prepared baking dish ( I like to use a clear dish so you can see the layers)

6Bake around 30 minutes or until cake tester comes out clean

7Allow cake to slightly cool and poke randomly with a straw. I like bigger holes so all the to pudding gets into the cake.

8Mix the pudding milk and sweetened condensed milk and spread on the poked cake

9Cream together the cream cheese and condensed milk then fold in whipped topping. Then beat until everything is smooth

10Spread whipped topping on top of the pudding mixture

11Place in the ice box for 2-3 hours

12Top with fresh blueberries and sliced strawberries. Either serve or cover and put back in the ice box. I don't like to place the fruit on top more the 2-3 hours before serving . Keep cold and store leftovers in fridge.
