Ingredients
- 1/4 cup each of flour and quick cooking rolled oats
- 1/4 cup brown sugar, lightly packed
- 1/2 tsp teaspoon baking powder and 1/2 tsp cinnamon
- 1/4 cup cold butter
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 cup icing sugar
- 3 - eggs
- 1/2 cup lemon juice, fresh
- 1/2 cup seedless raspberry jam

Step 1crumb topping......first 5 ingredients with pastry blend in butter til crumbly {I freeze the butter for 15 to 29 minutes} then grate it..it makes blending easier and faster

Step 2CAKE...pre heat oven to 350 degrees...combine flour and baking powder...beat eggs and icing sugar until creamyand beat until well combined..mix in lemon juice add flour mixture and beat til well ccombined.

Step 3grease with margarine a 9 inch springform pan..line with reynolds wrap..pour half cake mixture into pan..spread jam over the batter and pour remaining batter over that and then sprinkle with crumb mixture..bake 50 to 55 minutes until cake tester or toothpick comes out clean..cool on rack for 10 minutes then remove from cake pan and cool on rack..you canuse any jam to your liking...serves 8
