Ingredients
- 1 stick butter
- 1 cup sugar
- 2 teaspoons pure vanilla
- 4 large eggs
- 1 1/2 teaspoons baking powder
- 1 1/2 cups self raising flour
- - enough to cover cake raspberry or strawberry jam
- - stiff cream to place between two cakes
- - buttercream optional to place between 2 cakes
- - confectioners' sugar to dust the top of cake
- - sliced strawberries on top
How To Make "queen victoria sponge cake"

Step 1Cream the butter.

Step 2Gradually add in the sugar, salt and vanilla.

Step 3Add the eggs one at a time gradually.

Step 4Add the flour by hand with a wooden spoon making sure not to add, too much air.

Step 5Oil both the pans. Place on the center rack in oven until the sponges have risen well, and are golden brown. Bake 25 minutes at 350 degrees.

Step 6Allow to cool in pans for 5 minutes and turn out on a rack to cool.

Step 7When cooled add the raspberry jam to the bottom of one of the cakes.

Step 8Place the cream in a stand up mixer or an electric hand held mixer. Beat till very stiff.

Step 9Place the cream on top of the bottom cake with the jam on top. Place the cake on top of the other cake. Dust with powdered sugar in any design on top of cake. Done!
