An elderly lady we bowled with years ago gave me this recipe. It is fabulous!!!!

Ingredients
- 2 cups self rising flour
- 2 teaspoons cinnamon
- 1 2/3 cups sugar
- 4 - eggs
- 1 cup oil
- 16 ounces can of pumpkin
- CAKE
- 8 ounces cream cheese
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- FROSTING
How To Make pumpkin squares

Step 1Preheat oven 350 degrees. Mix dry ingredients- flour, cinnamon and sugar. Mix wet ingredients- eggs, oil and pumpkin. I add a little over the 16 oz of pumpkin. Probably about 18 oz. It makes it denser than a regular cake.

Step 2Then mix wet to dry ingredients. You will need a 15x10x1 jelly roll pan for cooking. After mixing place in the sprayed pan. Bake for 25 to 30 minutes. Cake is dense. Just make sure it is done.

Step 3While cake is cooling prepare frosting. Mix cream cheese, butter, vanilla and powdered sugar. You may need to add more powdered sugar. If to thick you can add a little milk.

Step 4Once cake is cooled frost and enjoy. Cake should be kept in the refrigerator. It is best eaten cold.
