pumpkin spice cake with spiced ice cream

Saw lots of recipes for this over the holidays...this is my own twist on it. I would HIGHLY recommend getting ice cream from an ice cream shop. We have our favorite hand scooped ice cream place and used the Sweet Cream they make there, really made it so much more delicious.

Ingredients

  • PUMPKIN SPICE CAKE
  • 1 box spice cake mix
  • 1 box instant french vanilla pudding mix (3.4oz)
  • 1/4 cup applesauce, unsweetened
  • 1 1/4 cups canned pumpkin
  • 1/4 cup water
  • 2 - whole eggs
  • 4 - egg whites
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • - powdered sugar
  • SPICED ICE CREAM
  • 1 pint french vanilla ice cream, softened
  • 1/4 cup dark brown sugar
  • 1/4 cup canned pumpkin
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice

How To Make pumpkin spice cake with spiced ice cream

  • Step 1
    Cake Grease a 10inch Bundt cake pan, then using a small amount of the spice cake mix, lightly dust the inside of the cake pan Preheat oven 350 Mix all cake ingredients on medium speed for 1 minute, then on high speed for 5 minutes Pour mix into cake pan, bake for 50 minutes or until a tooth pick inserted comes out clean Allow to cool for 10-15 minutes in pan, then flip out onto a plate.
  • Step 2
    Ice Cream Put softened ice cream into a mixing bowl add all other ingredients, using a mixer, blend until well mixed Place back inside ice cream container and put into freezer until time to serve
  • Step 3
    Serving Once cooled dust cake with powdered sugar Slice cake, serve with ice cream and another dusting of powdered sugar
