pumpkin spice cake
A snack cake. Can be made with unsweetened applesauce instead of pumpkin. I don’t frost it (just a dollop of whipped cream) but you can use your favorite frosting if desired, or a glaze.

Ingredients
- 1 1/8 cups all purpose flour
- 1/2 cup sugar, granulated
- 1/2 cup brown sugar, lightly packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon, ground
- 1/4 teaspoon cloves, ground
- 1/4 teaspoon allspice, ground
- 1/4 teaspoon nutmeg, ground
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 cup pumpkin puree (not pie filling)
- 1 - egg
- 1/2 cup semi-sweet chocolate chips (optional)
How To Make pumpkin spice cake

Step 1Prreheat oven to 350F. Coat a 9-inch cake pan or 8-inch square pan (glass is best) with nonstick cooking spray.

Step 2In a large bowl, combine all dry ingredients and whisk until blended.

Step 3Add all wet ingredients and whisk until blended. Stir in chocolate chips, if using.

Step 4Pour batter into prepared pan and bake 35-40 minutes, or until a skewer inserted in center comes out clean.

Step 5Cool completely in pan on wire rack. Frost if desired.
