A snack cake. Can be made with unsweetened applesauce instead of pumpkin. I don’t frost it (just a dollop of whipped cream) but you can use your favorite frosting if desired, or a glaze.

Ingredients

  • 1 1/8 cups all purpose flour
  • 1/2 cup sugar, granulated
  • 1/2 cup brown sugar, lightly packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon, ground
  • 1/4 teaspoon cloves, ground
  • 1/4 teaspoon allspice, ground
  • 1/4 teaspoon nutmeg, ground
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 cup pumpkin puree (not pie filling)
  • 1 - egg
  • 1/2 cup semi-sweet chocolate chips (optional)

How To Make pumpkin spice cake

  • Step 1
    Prreheat oven to 350F. Coat a 9-inch cake pan or 8-inch square pan (glass is best) with nonstick cooking spray.
  • Step 2
    In a large bowl, combine all dry ingredients and whisk until blended.
  • Step 3
    Add all wet ingredients and whisk until blended. Stir in chocolate chips, if using.
  • Step 4
    Pour batter into prepared pan and bake 35-40 minutes, or until a skewer inserted in center comes out clean.
  • Step 5
    Cool completely in pan on wire rack. Frost if desired.
  • Step 6
    Slice and serve.
