Pumpkin Spice Cake

A snack cake. Can be made with unsweetened applesauce instead of pumpkin. I don’t frost it (just a dollop of whipped cream) but you can use your favorite frosting if desired, or a glaze.

  • 1 1/8 c
    all purpose flour
  • 1/2 c
    sugar, granulated
  • 1/2 c
    brown sugar, lightly packed
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
  • 1/2 tsp
    cinnamon, ground
  • 1/4 tsp
    cloves, ground
  • 1/4 tsp
    allspice, ground
  • 1/4 tsp
    nutmeg, ground
  • 1/4 c
    vegetable oil
  • 1/4 c
  • 1 c
    pumpkin puree (not pie filling)
  • 1
  • 1/2 c
    semi-sweet chocolate chips (optional)

How to Make Pumpkin Spice Cake


  1. Prreheat oven to 350F. Coat a 9-inch cake pan or 8-inch square pan (glass is best) with nonstick cooking spray.
  2. In a large bowl, combine all dry ingredients and whisk until blended.
  3. Add all wet ingredients and whisk until blended. Stir in chocolate chips, if using.
  4. Pour batter into prepared pan and bake 35-40 minutes, or until a skewer inserted in center comes out clean.
  5. Cool completely in pan on wire rack. Frost if desired.
  6. Slice and serve.
