    unsalted butter, softened
  • 1/2 c
  • 1 large
  • 1-1/2 c
  • 1-1/2 tsp
    baking powder
  • 1/4 tsp
  • 1/4 tsp
    ground nutmeg
  • 1 c
    canned pumpkin
  • 1/2 c
    unsalted butter, melted
  • 1 c
  • 2 Tbsp

How to Make Pumpkin doughnut muffins


  1. Heat oven to 350. Spray a mini muffin pan w/ cooking spray. In medium bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
  2. In another bowl, whisk together milk and pumpkin. In lg bowl, beat softened butter and 1/2 cup sugar until light & fluffy. Beat in egg. Gradually add dry ingredients, alternating w/ pumpkin mix.
  3. Fill the muffin cups 3/4 full. Bake 20 mins. In small bowl, mix together 1 cup sugar and 2 tbsp cinnamon. Roll muffins in cinnamon-sugar mix.
