Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 large egg
- 1-1/2 cup flour
- 1-1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup canned pumpkin
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 tablespoons cinnamon
How To Make pumpkin doughnut muffins

Step 1Heat oven to 350. Spray a mini muffin pan w/ cooking spray. In medium bowl, whisk together flour, baking powder, cinnamon, and nutmeg.

Step 2In another bowl, whisk together milk and pumpkin. In lg bowl, beat softened butter and 1/2 cup sugar until light & fluffy. Beat in egg. Gradually add dry ingredients, alternating w/ pumpkin mix.

Step 3Fill the muffin cups 3/4 full. Bake 20 mins. In small bowl, mix together 1 cup sugar and 2 tbsp cinnamon. Roll muffins in cinnamon-sugar mix.
