Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1-1/2 cup flour
  • 1-1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup canned pumpkin
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 tablespoons cinnamon

How To Make pumpkin doughnut muffins

  • Step 1
    Heat oven to 350. Spray a mini muffin pan w/ cooking spray. In medium bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
  • Step 2
    In another bowl, whisk together milk and pumpkin. In lg bowl, beat softened butter and 1/2 cup sugar until light & fluffy. Beat in egg. Gradually add dry ingredients, alternating w/ pumpkin mix.
  • Step 3
    Fill the muffin cups 3/4 full. Bake 20 mins. In small bowl, mix together 1 cup sugar and 2 tbsp cinnamon. Roll muffins in cinnamon-sugar mix.
