I love pumpkin pie and pumpkin bread but this cake is the best!

Ingredients

  • 1 1/4 c
    oil
  • 4
    eggs
  • 2 c
    sugar
  • 2 c
    pumpkin, canned or cooked
  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 3 tsp
    cinnamon
  • CREAM CHEESE FROSTING

  • 8 oz
    cream cheese, softened
  • 1 stick
    butter or margarine
  • 1 tsp
    vanilla
  • 1 box
    confectioners' sugar

How to Make Pumpkin Cake

Step-by-Step

  1. Preheat oven to 350 degrees. Grease and flour one tube or Bundt pan.
  2. In a mixing bowl, beat oil and eggs with an electric mixer until creamy. Add the sugar and pumpkin; beat well. Combine dry ingredients and slowly add this mixture to the egg mixture; mix until combined.
  3. Bake at 350 degrees for 40 to 45 minutes or until cake tests done. Let cool on a wire rack. Once cool, frost with Cream Cheese Frosting.
  4. For frosting, beat the cream cheese, butter and vanilla. Add the box of confectioner's sugar and beat until fluffy.
