I usually make a fast pumpkin cake using a mix/pudding, etc but during this time of year, nothing beats homemade, from scratch, pumpkin cake. The house smells wonderful! And who can resist a cake with nuts, chocolate chips and coconut???

Ingredients
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 cups sugar
- 1/2 teaspoon salt
- 2 teaspoons nutmeg
- 2 teaspoons cinnamon
- 3 cups flour
- 4 eggs
- 2 cups pumpkin pie filling
- 1 cup vegetable oil
- 1 teaspoon pure vanilla
- 1 cup chocolate chips
- 1 cup chopped nuts
- 1/2 cup coconut-if desired
How To Make pumpkin cake

Step 1Preheat oven to 350 degrees and grease a tube pan. Verify you have all the ingredients and the correct amounts

Step 2In large mixing bowl, Mix together all dry ingredients by hand. Add eggs and liquid ingredients and use mixer to incorporate all the ingredients only until blended . Fold in nuts, chocolate chips, and coconut if desired

Step 3Pour into tube pan and bake 70 minutes or until tests done. If desired,top cake with glaze and nuts and chocolate chips
