I usually make a fast pumpkin cake using a mix/pudding, etc but during this time of year, nothing beats homemade, from scratch, pumpkin cake. The house smells wonderful! And who can resist a cake with nuts, chocolate chips and coconut???

Ingredients

  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 teaspoons nutmeg
  • 2 teaspoons cinnamon
  • 3 cups flour
  • 4 eggs
  • 2 cups pumpkin pie filling
  • 1 cup vegetable oil
  • 1 teaspoon pure vanilla
  • 1 cup chocolate chips
  • 1 cup chopped nuts
  • 1/2 cup coconut-if desired

How To Make pumpkin cake

  • Step 1
    Preheat oven to 350 degrees and grease a tube pan. Verify you have all the ingredients and the correct amounts
  • Step 2
    In large mixing bowl, Mix together all dry ingredients by hand. Add eggs and liquid ingredients and use mixer to incorporate all the ingredients only until blended . Fold in nuts, chocolate chips, and coconut if desired
  • Step 3
    Pour into tube pan and bake 70 minutes or until tests done. If desired,top cake with glaze and nuts and chocolate chips
