This is a favorite recipe of my whole family for the holidays. Everyone that's ever had it has loved it.

Ingredients

  • 4 - eggs
  • 1 cup oil
  • 2 1/4 cups sugar
  • 1 can (16oz) pumpkin
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon, ground
  • 1 teaspoon baking soda
  • 1 cup chopped nuts, optional
  • CREAM CHEESE FROSTING
  • 1 package (3oz) cream cheese, softened
  • 6 tablespoons butter, softened
  • 1 tablespoon half and half
  • 2 cups powdered sugar
  • 1 teaspoon salt

How To Make pumpkin bars for holidays

  • Step 1
    Heat oven 350. Grease 17x11" jellyroll pan
  • Step 2
    Beat eggs, oil and sugar; mix in pumpkin. Mix together dry ingredients; stir into egg mixture. Stir in nuts. Pour into greased jellyroll pan. Bake 20 to 30 minutes. Spread with Cream Cheese Frosting. Cut into bars. Makes 40 Bars.

    CREAM CHEESE FROSTING: Beat cream cheese with butter until creamy; add rest of ingredients, beating until creamy.
