I can't attest to the authenticity of this recipe, but I can attest to the fact that this cake is absolutely wonderful! This recipe was originally featured in several magazines shortly after the marraige of Prince Charles and Diana in 1981. According to the article, there were 27 cakes featured at the reception and this was one of the recipes. I think that the official cake was the traditional fruit cake frosted with marzipan and fondant. This is a very dense and wonderfully moist and flavorful cake, very similar to the Hummingbird cake. Ingredients

  • 1 1/4 c
    oil
  • 3
    eggs, well beaten (use mixer)
  • 1 3/4 c
    granulated sugar
  • 1 tsp
    pure vanilla extract
  • 2 1/4 c
    all purpose flour
  • 1 1/2 tsp
    cinnamon
  • 1 tsp
    baking soda
  • 1 can(s)
    crushed pineapple with juice (8 ounce size)
  • 1 1/2 c
    chopped bananas
  • 1 c
    chopped apples, peeled and cored
  • 3/4 c
    flaked coconut
  • 3/4 c
    chopped nuts
  • WEDDDING CAKE FROSTING

  • 1 pkg
    cream cheese (8 ounce size)
  • 1/4 c
    oil
  • 1 tsp
    pure vanilla extract
  • 3 c
    powdered sugar

How to Make Princess Diana's Wedding Cake

Step-by-Step

  1. Preheat oven to 350 degrees. Grease and flour a 9 X 13 baking dish.
  2. In large bowl, mix together oil, eggs, sugar, and vanilla extract. Sift the dry ingredients and add to mixture. Stir in the remaining ingredients. Pour batter into prepared pan and bake at 350 degrees for 48 to 50 minutes or until toothpick inserted in center comes out clean. Remove from oven and cool cake completely and frost with cream cheese frosting. Enjoy!
