poor man's raisin cake
I found this recipe in a cookbook my Momma put together at least 25 years ago. There is no listing as to where it came from. Actually the recipe was a little vague to I just tweeked to be mine

Ingredients
- 1/3 cup milk
- 1 cup raisins
- 2 cups water
- 1 teaspoon baking soda
- 2 tablespoons rounded of shortening aka crisco
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 pinch all spice
- 1 pinch nutmeg
- 1 pinch cinnamon
- 1 pinch ginger
How To Make poor man's raisin cake

Step 1cook water and raisins down to 1C juice. Add soda and shortening to liquid while warm. Add sugar and flour (enough to make a light batter) but not stiff. Then add Baking powder, salt allspice, nutmeg, cinnamon and ginger. Mix Well and bake 350 degrees for about 25 min. Depending on your oven.
