Very delicate and not sweet!! For someone who love plums!!!

Ingredients

  • 2 1/3 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup + 3 tablespoon sugar
  • 1 stick butter, softened
  • 3/4 cup milk
  • 2 large eggs
  • 8 - or 10 fresh plums pitted and halved
  • 2 teaspoons cinnamon, ground
  • TOPPING
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, cold cubed

How To Make plum cake

  • Step 1
    Lightly coat a 13"x9" pan with cooking spray. Heat oven to 350F degrees. In large bowl, combine flour, baking powder, salt and 3/4 cup sugar. Add 1/2 cup softened butter, milk and eggs. Beat at medium speed 4 minutes.
  • Step 2
    Pour batter into prepared pan. Place plums on top, cut side up, pushing down slightly into batter. Combine cinnamon and remaining sugar; sprinkle over plums.
  • Step 3
    TOPPING: In small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over top.
  • Step 4
    Bake about 45 minutes or until a toothpick come out clean. ( I bake little bit longer to get the topping turn golden. )
  • Step 5
    Let the cake cool in the pan so the plum juices will be reabsorbed to create a moist cake. Sprinkle with confectioners sugar. Cut and serve.
