Ingredients
- 2 1/3 cups all purpose flour
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 3/4 cup + 3 tablespoon sugar
- 1 stick butter, softened
- 3/4 cup milk
- 2 large eggs
- 8 - or 10 fresh plums pitted and halved
- 2 teaspoons cinnamon, ground
- TOPPING
- 1 cup all purpose flour
- 1/2 cup sugar
- 1/2 cup butter, cold cubed
How To Make plum cake

Step 1Lightly coat a 13"x9" pan with cooking spray. Heat oven to 350F degrees. In large bowl, combine flour, baking powder, salt and 3/4 cup sugar. Add 1/2 cup softened butter, milk and eggs. Beat at medium speed 4 minutes.

Step 2Pour batter into prepared pan. Place plums on top, cut side up, pushing down slightly into batter. Combine cinnamon and remaining sugar; sprinkle over plums.

Step 3TOPPING: In small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over top.

Step 4Bake about 45 minutes or until a toothpick come out clean. ( I bake little bit longer to get the topping turn golden. )

Step 5Let the cake cool in the pan so the plum juices will be reabsorbed to create a moist cake. Sprinkle with confectioners sugar. Cut and serve.
