Ingredients

  • 2 1/3 c
    all purpose flour
  • 2 1/2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 3/4 c
    + 3 tablespoon sugar
  • 1 stick
    butter, softened
  • 3/4 c
    milk
  • 2 large
    eggs
  • 8
    or 10 fresh plums pitted and halved
  • 2 tsp
    cinnamon, ground
  • TOPPING

  • 1 c
    all purpose flour
  • 1/2 c
    sugar
  • 1/2 c
    butter, cold cubed

How to Make Plum Cake

Step-by-Step

  1. Lightly coat a 13"x9" pan with cooking spray. Heat oven to 350F degrees. In large bowl, combine flour, baking powder, salt and 3/4 cup sugar. Add 1/2 cup softened butter, milk and eggs. Beat at medium speed 4 minutes.
  2. Pour batter into prepared pan. Place plums on top, cut side up, pushing down slightly into batter. Combine cinnamon and remaining sugar; sprinkle over plums.
  3. TOPPING:

    In small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over top.
  4. Bake about 45 minutes or until a toothpick come out clean.

    ( I bake little bit longer to get the topping turn golden. )
  5. Let the cake cool in the pan so the plum juices will be reabsorbed to create a moist cake. Sprinkle with confectioners sugar. Cut and serve.
