Very moist cake. Great to be used as a "coffee" cake.

Ingredients

  • 2 - eggs
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 20 ounces can of crushed pineapple
  • 1 cup chopped walnuts or pecans
  • 1/2 cup flaked coconut

How To Make pineapple walnut cake

  • Step 1
    Preheat Oven 350 degrees.
  • Step 2
    Beat eggs and sugar together for 2 minutes.
  • Step 3
    Add your flour, baking soda, vanilla, can of pineapple (Do not drain), chopped walnuts (or pecans) and coconut. Beat until mixed together.
  • Step 4
    Pour into a 13 X 9 pan sprayed pan with cooking spray.
  • Step 5
    Bake for 35-40 minutes. This will be very moist to the touch.
