pineapple spiced loaf
This is a recipe from 1960. I made it for my family many times. I prefer to use the all-purpose flour option. It made a slightly firmer loaf.

Ingredients
- 2 cups cake flour or 1 3/4 c. all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 6 tablespoons shortening
- 3/4 cup white sugar
- 2 - eggs
- 1 cup crushed pineapple with juice
- - shredded coconut
How To Make pineapple spiced loaf

Step 1Grease a loaf pan and line with waxed or parchment paper.

Step 2Sift together twice and return to sifter first 7 (dry) ingredients.

Step 3Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.

Step 4Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition. Turn batter into prepared pan. Sprinkle with a little shredded coconut.

Step 5Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
