depends on size of slice
cake flour or 1 3/4 c. all purpose flour
crushed pineapple with juice
1Grease a loaf pan and line with waxed or parchment paper.
2Sift together twice and return to sifter first 7 (dry) ingredients.
3Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.
4Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition.
Turn batter into prepared pan. Sprinkle with a little shredded coconut.
5Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
