This is a recipe from 1960. I made it for my family many times. I prefer to use the all-purpose flour option. It made a slightly firmer loaf.

Ingredients

  • 2 c
    cake flour or 1 3/4 c. all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 1/4 tsp
    cloves
  • 1/4 tsp
    nutmeg
  • 6 Tbsp
    shortening
  • 3/4 c
    white sugar
  • 2
    eggs
  • 1 c
    crushed pineapple with juice
  • ·
    shredded coconut

How to Make Pineapple Spiced Loaf

Step-by-Step

  1. Grease a loaf pan and line with waxed or parchment paper.
  2. Sift together twice and return to sifter first 7 (dry) ingredients.
  3. Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.
  4. Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition.
    Turn batter into prepared pan. Sprinkle with a little shredded coconut.
  5. Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
