This is a recipe from 1960. I made it for my family many times. I prefer to use the all-purpose flour option. It made a slightly firmer loaf.

Ingredients

  • 2 cups cake flour or 1 3/4 c. all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 6 tablespoons shortening
  • 3/4 cup white sugar
  • 2 - eggs
  • 1 cup crushed pineapple with juice
  • - shredded coconut

How To Make pineapple spiced loaf

  • Step 1
    Grease a loaf pan and line with waxed or parchment paper.
  • Step 2
    Sift together twice and return to sifter first 7 (dry) ingredients.
  • Step 3
    Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.
  • Step 4
    Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition. Turn batter into prepared pan. Sprinkle with a little shredded coconut.
  • Step 5
    Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
