This is a recipe from 1960. I made it for my family many times. I prefer to use the all-purpose flour option. It made a slightly firmer loaf.

Ingredients

2 c
cake flour or 1 3/4 c. all purpose flour
2 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
salt
1 tsp
cinnamon
1/4 tsp
cloves
1/4 tsp
nutmeg
6 Tbsp
shortening
3/4 c
white sugar
2
eggs
1 c
crushed pineapple with juice
shredded coconut

How to Make Pineapple Spiced Loaf

Step-by-Step

  • 1Grease a loaf pan and line with waxed or parchment paper.
  • 2Sift together twice and return to sifter first 7 (dry) ingredients.
  • 3Cream shortening and sugar. Add 2 well-beaten eggs a little at a time, beating well after each addition.
  • 4Add dry ingredients alternately with the crushed pineapple and juice. Combine lightly after each addition.
    Turn batter into prepared pan. Sprinkle with a little shredded coconut.
  • 5Bake in 350 degree F. oven for 1 hour. When done let loaf pan cool on a rack for 15 minutes before turning out. Cool completely before serving.
