- 1 - lemon cake mix
- 4 - eggs
- 3/4 cup vegetable oil
- 10 ounces 7-up
- 8 ounces crushed pineapple, drained (small can)
- 1 box vanilla instant pudding mix (4.6 oz.)
- 1 teaspoon rum flavored extract (optional)
- 1/2 cup pecans, chopped (optional)
- FROSTING
- 1 box powdered sugar (lb.)
- 8 ounces cream cheese, softened
- 1/2 stick butter, softened
- 1 teaspoon coconut extract
- 1 cup coconut, flaked
How To Make pina colada cake

Step 1Beat eggs until creamy. Add oil, 7-Up, dry cake mix, pudding mix, and rum flavored extract. Mix well and add drained pineapple; stir in pecans. Bake in a 13x9 in. greased baking dish at 350 degrees for 25 minutes or as directed for a 13x9 in. cake pan. Cool and frost.

Step 2Frosting: Beat together the cream cheese and butter until it is a creamy blend. Add sugar slowly while beating. Mix in the coconut extract. Frost cake and sprinkle with coconut. Option: If you prefer, add coconut to icing before frosting.
