This is for those who love coconut, pineapple, and Pina Coladas without the alcohol! It is another shortcut recipe, but it is moist and delicious! I hope you enjoy it as much as we do!

Ingredients

  • 1 - lemon cake mix
  • 4 - eggs
  • 3/4 cup vegetable oil
  • 10 ounces 7-up
  • 8 ounces crushed pineapple, drained (small can)
  • 1 box vanilla instant pudding mix (4.6 oz.)
  • 1 teaspoon rum flavored extract (optional)
  • 1/2 cup pecans, chopped (optional)
  • FROSTING
  • 1 box powdered sugar (lb.)
  • 8 ounces cream cheese, softened
  • 1/2 stick butter, softened
  • 1 teaspoon coconut extract
  • 1 cup coconut, flaked

How To Make pina colada cake

  • Step 1
    Beat eggs until creamy. Add oil, 7-Up, dry cake mix, pudding mix, and rum flavored extract. Mix well and add drained pineapple; stir in pecans. Bake in a 13x9 in. greased baking dish at 350 degrees for 25 minutes or as directed for a 13x9 in. cake pan. Cool and frost.
  • Step 2
    Frosting: Beat together the cream cheese and butter until it is a creamy blend. Add sugar slowly while beating. Mix in the coconut extract. Frost cake and sprinkle with coconut. Option: If you prefer, add coconut to icing before frosting.
