Ingredients

  • CUPCAKES

  • 1 1/2 c
    flour
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    softened butter
  • 1/2 c
    sugar
  • 1/2 c
    sour cream
  • 2 large
    eggs
  • 1/4 c
    sweet pickle juice
  • 1/3 c
    bread and butter pickles finely chopped
  • FROSTING

  • 1/2 c
    butter softened
  • 8 oz
    cream cheese softened
  • 2 1/2 c
    powdered sugar
  • 1 Tbsp
    vanilla
  • 2 Tbsp
    sweet pickle juice
  • GARNISH

  • ·
    pickles for garnish

How to Make Pickle Cupcakes

Step-by-Step

  1. Preheat oven 350 degrees.
    Add cupcake liners to cupcake pan.
  2. In a large bowl cream together the butter and sugar. Add the eggs and beat. Add the sour cream and pickle juice. Beat. Add the flour, baking powder and salt. Mix well.
  3. Fill each cupcake to about half full. Bake for 20 minutes or until done. Let cool completely.
  4. Whip all the ingredients together for the frosting beating until fluffy. If too thick add a little milk. Spread on cupcakes and garnish with a pickle slice.
