Ingredients

  • CUPCAKES
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup sweet pickle juice
  • 1/3 cup bread and butter pickles finely chopped
  • FROSTING
  • 1/2 cup butter softened
  • 8 ounces cream cheese softened
  • 2 1/2 cups powdered sugar
  • 1 tablespoon vanilla
  • 2 tablespoons sweet pickle juice
  • GARNISH
  • - pickles for garnish

How To Make pickle cupcakes

  • Step 1
    Preheat oven 350 degrees. Add cupcake liners to cupcake pan.
  • Step 2
    In a large bowl cream together the butter and sugar. Add the eggs and beat. Add the sour cream and pickle juice. Beat. Add the flour, baking powder and salt. Mix well.
  • Step 3
    Fill each cupcake to about half full. Bake for 20 minutes or until done. Let cool completely.
  • Step 4
    Whip all the ingredients together for the frosting beating until fluffy. If too thick add a little milk. Spread on cupcakes and garnish with a pickle slice.
