Mom used to make me Cookie Sheet Cake (aka Texas Sheet Cake by my mother in law) when she was sick, and we would take it out into the backyard and have a picnic together. This recipe is very similar to that wonderful ooey gooey chocolate cake, only with peanut butter! I took this to my mother in law's house for Easter in 2012, and it went so fast...a wonderful peanut butter cake that will have you licking your chops and fingers too! In fact, my sister in law remembered it so well, she asked for it again in 2018...very little was left (except the pan to lick)!

Ingredients For peanut butter "texas" sheet cake

    flour
  • 2 c
    sugar
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 1/2 c
    butter, divided
  • 1 c
    water
  • 1/2 c
    creamy peanut butter, divided
  • 2
    eggs, beaten
  • 2 tsp
    vanilla, divided
  • 1/2 c
    buttermilk
  • 1/3 c
    plus 1 t milk
  • 16 oz
    powdered sugar
  • chopped peanuts, optional

How To Make peanut butter "texas" sheet cake

    Combine flour, sugar, salt and soda; set aside. Combine one cup butter, water and 1/4 cup peanut butter in a saucepan over medium heat; bring to a boil. Add to flour mixture and mix well; set aside. Combine eggs, one teaspoon vanilla and buttermilk; add to peanut butter mixture. Spread batter in a greased 15x10 jelly roll (cookie sheet) pan. Bake at 350 degrees for 25-28 minutes, until cake springs back when gently touched.

    Combine remaining butter, peanut butter and milk in a saucepan over medium heat, bring to a boil. Remove from heat, stir in powdered sugar and remaining vanilla, making a spreading consistency. Spread frosting over warm cake and garnish with chopped peanuts if desired.
