1 dozen big cupcakes, or 3 dozen tiny pupcakes
Ingredients
- 1 3/4 cups whole wheat flour
- 1 cup skim milk
- 1/4 cup honey
- 1/2 cup all natural peanut butter (adams is my fave!)
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 - eggs
- 1 teaspoon baking soda

Step 1Preheat oven to 350. In a bowl, mix all the ingredients until blended; then beat the batter for two minutes. Spoon the batter into muffin cups, three-quarters full. Bake for 18-20 minutes (for full size pupcakes, 12 minutes for minis). The pupcakes are completely done when a toothpick inserted in the center comes out clean. Let them cool and then remove from the muffin pan.
