This cake recipe is from the Quebec area and is a winner. It is great as is, or served hot with ice cream.
2 1/2 cbrown sugar, firmly packed
2 Tbspall purpose flour
3 1/4 cwater
3 Tbspbutter or margarine
1/3 cgranulated white sugar
3/4 cmilk you have on hand
3 Tbspbutter melted
2 call purpose flour
1 1/2 tspbaking powder
How to Make PAUPER'S CAKE
- I also call this Dumpling Cake, because of how it is mixed and baked in the oven usually in the pan that you will heat the sauce. Make sure it has high sides to avoid spilling over in the oven. I have made this for 30 people and have used my turkey pan to make the sauce; add the batter; and bake it.
- In a large high sided saucepan; blend brown sugar with flour add water and butter. Heat on medium heat to boiling point, watch carefully.......
- BATTER: In a bowl, combine flour, sugar, baking powder and salt. Stir in melted butter, milk, and beaten egg. Mix well and drop large spoonfuls of batter into the hot sauce like you would if making dumplings.
- Pre heat oven to 350 .
Bake 35 to 40 minutes until tops are brown.
When supper is done Serve your hot dessert with ice cream or as is.
