papa's lite pineapple pudding cake

My father not a big fan of heavy sweet cakes, but loves his pineapple. I made him a pineapple jello cake last year and set off to do the same, forgot the jello so lucky for me I gathered other pantry items to make him this yummy cake for his birthday. Happy 75th Birthday Papa!!!

Ingredients

  • 1 - yellow cake mix
  • 1 - 8oz can lite pineapple with half juice reserved
  • 3 - splenda packets or 1/2 cup sugar
  • 1 - small box sf vanilla pudding
  • 2 cups skim milk
  • 1 - lite coolwhip

How To Make papa's lite pineapple pudding cake

  • Step 1
    Bake yellow cake according to package directions and let cool.
  • Step 2
    While cooling make pudding, set aside in refrigerator. Combine pineapple and half reserved juice with sugar and stir.
  • Step 3
    Poke holes in cake with wooden spoon handle. Pour pineapple mix over cake. Spread pudding over.
  • Step 4
    Top with coolwhip and refrigerate (about hour) Before serving. Optional can fold coconut or pineapple into coolwhip.
