paleo wow coconut bread
I have started making my own coconut milk at home and if you do this you know, I am now generating a LOT of coconut flour to be used. Since coconut flour is expensive, I haven't used a lot of it in my recipes before. Blue Ribbon Recipe
If you're a fan of the Paleo way of eating, then this coconut bread recipe is for you. It has a nutty, natural flavor to it. We added the optional coconut and raw sugar which forms a slight crust on top (but doesn't add sweetness to the recipe). This could be eaten as a meal or a snack. We served it with natural nut butter, banana slices, almonds, and honey for a delicious snack. This would be a great base for avocado toast too.
Ingredients
- 3/4 cup organic coconut flour
- 1 teaspoon aluminum-free baking powder
- 1/2 teaspoon sea salt
- 1/2 cup raw organic coconut oil, softened
- 1 tablespoon cinnamon, ground
- 1/2 teaspoon fresh ground nutmeg
- 1 teaspoon organic vanilla extract
- 2 tablespoons raw apple cider vinegar
- 6 large free range eggs, seperated
- 2 tablespoons raw honey
- 2 tablespoons dried organic unsweetened coconut flakes *optional
- 2 teaspoons raw sugar *optional
How To Make paleo wow coconut bread

Step 1Preheat oven to 350 F and grease a standard loaf pan. Line the bottom of the pan with parchment paper.

Step 2Mix together coconut flour, baking powder, salt, cinnamon, and nutmeg in a large bowl.

Step 3Add in softened coconut oil and honey. Stir until well blended and smooth.

Step 4Separate eggs. Beat egg whites until stiff and reserve.

Step 5Add egg yolks to the batter with vanilla and apple cider vinegar.

Step 6Working quickly, but gently, fold in egg whites.

Step 7Pour the batter into your loaf pan. Sprinkle on some flaked coconut and sugar, if desired.

Step 8Bake in a 350 degree F oven for about 40 minutes.
