Ingredients
- CAKE:
- 2 - egg whites
- 1 1/3 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon allspice, ground
- 1/2 teaspoon cloves, ground
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 - egg yolks
- 2/3 cup milk
- 1 teaspoon vanilla
- 3/4 cup raisins
- ICING
- 1/4 cup butter, softened
- 2 cups sifted icing sugar
- 1 tablespoon lemon juice
- 1-2 tablespoon cream or milk
- - chopped walnuts
How To Make old fashioned raisin spice cake

Step 1Beat egg whites to stiff but moist peaks. Combine flour, baking powder, salt and spices in a large mixing bowl. Stir well to blend. Add butter, sugar, egg yolks, milk and vanilla. Beat with electric mixer on medium speed until smooth, about 1 1/2 minutes. Stir in raisins. Fold in stiff egg whites.

Step 2Spread batter evenly in greased 9 " square cake pan.

Step 3Bake at 375 degrees F. for 30 - 35 minutes. Cool completely.

Step 4Icing: Cream butter, half of icing sugar and lemon juice together until light. Gradually add icing sugar and enough cream to make a smooth spreading consistency. Spread over cooled cake. Sprinkle with chopped walnuts, to decorate, if desired.
