From my friend Debbie - another "old fashioned rustic" cake. It is so yummy! Her family hates raisins, mine love them so sometimes I throw some raisins in the batter too. If I do, I cut the sugar by about 1/4 cup

Ingredients

  • CAKE
  • 1 1/4 cups boiling water
  • 1/2 cup unsalted butter
  • 1 cup oatmeal, old-fashioned
  • 1 cup sugar
  • 1 cup dark brown sugar, packed
  • 2 large eggs
  • 1 1/3 cups flour
  • 1/4 teaspoon freshly ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • FROSTING
  • 1/2 cup dark brown sugar, packed
  • 4 tablespoons cream or evaporated milk
  • 1 cup coconut
  • 1 cup chopped pecans
  • 6 tablespoons melted butter
  • 1 teaspoon pure vanilla extract

How To Make old fashioned oatmeal cake

  • Step 1
    Mix together the boiling water, oatmeal and 1/2 C butter. Let set 20 minutes.
  • Step 2
    Mix together sugar, dark brown sugar, and eggs. Add to the oatmeal mixture and beat to blend.
  • Step 3
    Whisk together the flour, nutmeg, cinnamon, salt, baking soda. Stir into the oatmeal mixture just until blended. If you love raisins, now is the time to stir 3/4 cup of them into the batter.
  • Step 4
    Pour the batter into a greased 9" x 13" pan and bake for 35 minutes at 350 degrees F.
  • Step 5
    While the cake is baking, make the frosting. In a medium bowl mix all the frosting ingredients. Spread the frosting over the cake, then set the cake under the broiler until it bubbles and is browned.
