Her family hates raisins, mine love them so sometimes I throw some raisins in the batter too. If I do, I cut the sugar by about 1/4 cup
Ingredients

1 1/4 cboiling water

1/2 cunsalted butter

1 coatmeal, old-fashioned

1 csugar

1 cdark brown sugar, packed

2 largeeggs

1 1/3 cflour
-
1/4 tspfreshly ground nutmeg

1 tspground cinnamon

1 tspbaking soda

1/2 tspsalt

FROSTING
-
1/2 cdark brown sugar, packed

4 Tbspcream or evaporated milk
-
1 ccoconut
-
1 cchopped pecans
-
6 Tbspmelted butter
-
1 tsppure vanilla extract
How to Make Old Fashioned Oatmeal Cake
- Mix together the boiling water, oatmeal and 1/2 C butter. Let set 20 minutes.
- Mix together sugar, dark brown sugar, and eggs.
Add to the oatmeal mixture and beat to blend. - Whisk together the flour, nutmeg, cinnamon, salt, baking soda. Stir into the oatmeal mixture just until blended. If you love raisins, now is the time to stir 3/4 cup of them into the batter.
- Pour the batter into a greased 9" x 13" pan and bake for 35 minutes at 350 degrees F.
- While the cake is baking, make the frosting. In a medium bowl mix all the frosting ingredients.
Spread the frosting over the cake, then set the cake under the broiler until it bubbles and is browned.
