From my friend Debbie - another "old fashioned rustic" cake. It is so yummy!

Her family hates raisins, mine love them so sometimes I throw some raisins in the batter too. If I do, I cut the sugar by about 1/4 cup

How to Make Old Fashioned Oatmeal Cake

Step-by-Step

  1. Mix together the boiling water, oatmeal and 1/2 C butter. Let set 20 minutes.
  2. Mix together sugar, dark brown sugar, and eggs.
Add to the oatmeal mixture and beat to blend.
  3. Whisk together the flour, nutmeg, cinnamon, salt, baking soda. Stir into the oatmeal mixture just until blended. If you love raisins, now is the time to stir 3/4 cup of them into the batter.

  5. While the cake is baking, make the frosting. In a medium bowl mix all the frosting ingredients.
