old fashioned eclair cake
Sooo easy.. yet sooo good! Although not your typical version of an eclair cake, this light and airy dessert tastes close to the real thing. - and cuts out a bunch of the guilt. Especially when you substitute with light or fat/sugar free ingredients. The crackers melded with the pudding make a nice, flaky crust. It's just the right amount of sweet, & absolutely satisfies! This makes a small pan. But, feel free to double the recipe and put in a larger sized pan!

- 1 box chocolate pudding, prepared
- 8 ounces cool whip
- 32 - saltine crackers, unsalted
How To Make old fashioned eclair cake

Step 1Layer 16 crackers in the bottom of an 8X8 pan.

Step 2Next, spread half the pudding on top of the crackers.

Step 3Place 16 more crackers on top of the pudding.

Step 4Spread the last half of pudding on top of that layer of crackers.

Step 5Top with a layer of cool whip.

Step 6Chill for a minimum of 3 hours before serving!
