Sooo easy.. yet sooo good! Although not your typical version of an eclair cake, this light and airy dessert tastes close to the real thing. - and cuts out a bunch of the guilt. Especially when you substitute with light or fat/sugar free ingredients. The crackers melded with the pudding make a nice, flaky crust. It's just the right amount of sweet, & absolutely satisfies! This makes a small pan. But, feel free to double the recipe and put in a larger sized pan!

Ingredients

  • 1 box chocolate pudding, prepared
  • 8 ounces cool whip
  • 32 - saltine crackers, unsalted

How To Make old fashioned eclair cake

  • Step 1
    Layer 16 crackers in the bottom of an 8X8 pan.
  • Step 2
    Next, spread half the pudding on top of the crackers.
  • Step 3
    Place 16 more crackers on top of the pudding.
  • Step 4
    Spread the last half of pudding on top of that layer of crackers.
  • Step 5
    Top with a layer of cool whip.
  • Step 6
    Chill for a minimum of 3 hours before serving!
