old fashion chocolate mayo cake
This a very moist, chocolate,rich goodness. I adopted this recipe from Barbara McNeil of NW FL and also my mother. I tweaked the two recipes and made an adaptation of an oldie but goldie.

Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons cocoa powder
- 1 cup mayonnaise
- 1 cup sugar
- 1 cup water
- 2 teaspoons vanilla extract
- TOPPING
- 2 cups sugar
- 1/2 cup evaporated milk
- 1 stick butter
- 1 teaspoon vanilla extract
- 3 teaspoons cocoa powder
- 1 pinch salt
- 1 cup pecans (optional)

Step 1Sift dry ingredients together. Mix mayo and sugar. Alternate mixing mayo mix, dry ingredients and water til blended well. Then add vanilla and mix well. Pour into 9x13 greased sheet pan. Bake until toothpick comes clean. Bake @ 350 for 15-20 min or when the toothpick comes out clean. Determine by your oven.

Step 2While cooling mix your topping. In small boiler add sugar, evap. milk, cocoa and butter. Boil, stirring costantly, for 3 min. Then add vanilla and pinch of salt--mix well. Add nuts if you choose.

Step 3With butter knife make poke holes in cake to absorb topping. Pour topping into center of cake spreading all over and over the edges. Let sit till cools. Eat!
