Great hit with family and friends. Moist and delicious with wonderful topping. Great one to take along for covered dish or dinner dessert. I wanted something that added fiber to my diet and was sweet. Love the brown sugar & cinnamon flavor.

Ingredients
- 1 1/2 cups water, boiling
- 1 cup oatmeal, quick cooking
- 1/2 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 - eggs, beaten
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinamon
- TOPPING
- 1/2 cup butter
- 1/4 cup cream or milk
- 1/2 cup brown sugar
- 1 cup pecans, in pieces or chopped
- 1 cup coconut
- 1 teaspoon vanilla
How To Make oatmeal cake

Step 1Pour boiling water over oatmeal and let stand 20 minutes.

Step 2Cream together butter, sugars, and eggs and blend well.

Step 3Sift flour, salt, soda and add to butter mixture little at a time & blend well.

Step 4Add oatmeal and cinnamon and blend together.

Step 5Bake at 325 degrees in a 9 x 13 pan for 35-45 minutes.

Step 6TOPPING

Step 7Heat butter, cream and sugar in pan (do not let boil).

Step 8Add remaining ingredients and put the topping on cake right out of oven. Place in oven under the broiler until slightly browned. Let cool.
