This is a very moist cake. A cake that my Grandmother & Mother frequently made. Great with a cup of coffee or tea.

Ingredients

  • 1 cup quick cooking oats
  • 1 stick butter
  • 1 cup sugar
  • 1 cup brown sugar, firmly packed
  • 2 - eggs
  • 1 1/3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon

How To Make oatmeal cake

  • Step 1
    Pour 1 1/4 c. boiling water over oats & butter. Let stand for 20 minutes.
  • Step 2
    Mix the sugars, flour, baking soda, nutmeg & cinnamon.
  • Step 3
    Add eggs, 1 at a time.
  • Step 4
    After 20 minutes, add the oats & water mixture. Mix well.
  • Step 5
    Bake & top when done with - 6 Tablespoons soft butter 1/4 c. cream 1/2 c. sugar 1/2 teaspoon vanilla 1 c. coconut & nuts Mix & spread on cake & put in broiler for about 5 minutes or until lightly browned.
  • Step 6
    Bake in 13x9" pan.
