This is a very moist cake. A cake that my Grandmother & Mother frequently made. Great with a cup of coffee or tea.

  • 1 c
    quick cooking oats
  • 1 stick
  • 1 c
  • 1 c
    brown sugar, firmly packed
  • 2
  • 1 1/3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1 tsp

How to Make Oatmeal Cake


  1. Pour 1 1/4 c. boiling water over oats & butter. Let stand for 20 minutes.
  2. Mix the sugars, flour, baking soda, nutmeg & cinnamon.
  3. Add eggs, 1 at a time.
  4. After 20 minutes, add the oats & water mixture. Mix well.
  5. Bake & top when done with - 6 Tablespoons soft butter
    1/4 c. cream
    1/2 c. sugar
    1/2 teaspoon vanilla
    1 c. coconut & nuts
    Mix & spread on cake & put in broiler for about 5 minutes or until lightly browned.
  6. Bake in 13x9" pan.
