This cake uses simple ingredients you have on hand.It is also heathy. I don't enter anything for prizes, but I have made cakes and sold them for years on holidays. Hope everyone that tries this enjoys it.

Ingredients
- one cup regular oats
- 1/2 cup butter or margarine
- 1 1/4 cups boiling water
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 - large eggs
- 1 cup brown sugar
- 3/4 cup white sugar

How To Make oatmeal cake

Step 1Preheat oven to 350. Put oats, butter, and boiling water in a bowl for 20 min. and cover. After 20 min. add eggs one at a time, beating after each one on medium speed.

Step 2combine dry ingredients. Add sugar and flour mixture and beat on medium till combined well.

Step 3Pour into a greased and floured 9 x 13 pan or use Bakers Joy. Bake 25 to 30 min or until tests done.

Step 4Topping. Melt 6 T. butter,2/3 cup brown sugar, 1/4 cup canned cream, 1 cup coconut, 1 cup chopped nuts, and 1 tsp vanilla. Boil butter, sugar, and cream till combind. Stir in vanilla, coconut, and nuts. Spread over warm cake and broil 3 to 5 min or until brown and bubbly. Let cool and serve.
