norma's lemony banana-walnut bread
I made this last year for Christmas gifts and everyone that got a loaf wanted the recipe. I think I'll make it again this year also along with my other treats.

Ingredients
- 2/3 cup shortening
- 1 cup sugar
- 1 1/2 cups mashed ripe bananas ( about 3 medium )
- 7 tablespoons fresh lemon juice ( about 3 lemons ), divided
- 2 large eggs
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1 tablespoon grated lemon peel
- 1/2 cup powdered sugar

Step 1Preheat oven to 325. Grease 2 ( 8 1/2 X 4 1/2-inch) loaf pans.

Step 2Beat shortening and sugar in large bowl mixing bowl and mix at medium speed until well blended.

Step 3Add eggs, one at a time, mixing well after each addition.

Step 4Blend in bananas and 6 tablespoons of lemon juice.

Step 5Combine flour, baking soda, baking powder and salt in medium bowl.

Step 6Add to banana mixture; mix until blended.

Step 7Stir in walnuts and lemon peel.

Step 8Pour evenly into prepared pans.

Step 9Bake for 50 to 60 minutes or until wooden toothpick inserted into centers comes out clean.

Step 10Remove pans onto a wire rack and cool completely.

Step 11Combine powdered sugar and remaining one tablespoon of lemon juice in small bowl and stir until smooth.

Step 12Drizzle over cooled loaves and let set.
