I made this last year for Christmas gifts and everyone that got a loaf wanted the recipe. I think I'll make it again this year also along with my other treats.

Ingredients

  • 2/3 cup shortening
  • 1 cup sugar
  • 1 1/2 cups mashed ripe bananas ( about 3 medium )
  • 7 tablespoons fresh lemon juice ( about 3 lemons ), divided
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 tablespoon grated lemon peel
  • 1/2 cup powdered sugar

  • Step 1
    Preheat oven to 325. Grease 2 ( 8 1/2 X 4 1/2-inch) loaf pans.
  • Step 2
    Beat shortening and sugar in large bowl mixing bowl and mix at medium speed until well blended.
  • Step 3
    Add eggs, one at a time, mixing well after each addition.
  • Step 4
    Blend in bananas and 6 tablespoons of lemon juice.
  • Step 5
    Combine flour, baking soda, baking powder and salt in medium bowl.
  • Step 6
    Add to banana mixture; mix until blended.
  • Step 7
    Stir in walnuts and lemon peel.
  • Step 8
    Pour evenly into prepared pans.
  • Step 9
    Bake for 50 to 60 minutes or until wooden toothpick inserted into centers comes out clean.
  • Step 10
    Remove pans onto a wire rack and cool completely.
  • Step 11
    Combine powdered sugar and remaining one tablespoon of lemon juice in small bowl and stir until smooth.
  • Step 12
    Drizzle over cooled loaves and let set.
