I made this last year for Christmas gifts and everyone that got a loaf wanted the recipe. I think I'll make it again this year also along with my other treats.

Ingredients

  • 2/3 c
    shortening
  • 1 c
    sugar
  • 1 1/2 c
    mashed ripe bananas ( about 3 medium )
  • 7 Tbsp
    fresh lemon juice ( about 3 lemons ), divided
  • 2 large
    eggs
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    chopped walnuts
  • 1 Tbsp
    grated lemon peel
  • 1/2 c
    powdered sugar

How to Make Norma's Lemony Banana-Walnut Bread

Step-by-Step

  1. Preheat oven to 325. Grease 2 ( 8 1/2 X 4 1/2-inch) loaf pans.
  2. Beat shortening and sugar in large bowl mixing bowl and mix at medium speed until well blended.
  3. Add eggs, one at a time, mixing well after each addition.
  4. Blend in bananas and 6 tablespoons of lemon juice.
  5. Combine flour, baking soda, baking powder and salt in medium bowl.
  6. Add to banana mixture; mix until blended.
  7. Stir in walnuts and lemon peel.
  8. Pour evenly into prepared pans.
  9. Bake for 50 to 60 minutes or until wooden toothpick inserted into centers comes out clean.
  10. Remove pans onto a wire rack and cool completely.
  11. Combine powdered sugar and remaining one tablespoon of lemon juice in small bowl and stir until smooth.
  12. Drizzle over cooled loaves and let set.
